Why don’t you enjoy a soft and chewy texture appreciating a rectangular-shaped tray?

A soba (buckwheat noodles) restaurant quite near the south exit of NISHIOGIKUBO Station.

The signature menu of this restaurant is home-made cold juwari-soba called “hakomori soba”, or literally 100% soba noodles served in a rectangular-shaped box.

You are recommended to put wasabi or Japanese horseradish, finely chopped green onions, grated radish into a dipping sauce little by little and dip a small amount of soba in the sauce and slowly eat them enjoying their flavor and chewy texture.

The storekeeper commented, “You asked me why I adopted the rectangular-shaped tray. In the 1980’s round-shaped trays were dominant, but I wanted to make something new and unique. After much deliberation, I finally decided to adopt this shape.”   

 

新機軸の盛り

細長い形の盛りを愛でつつもちもち感を味わいませんか?

JR西荻窪駅南口のごく近くにある蕎麦(そば)店。

看板メニューは自家製の冷たい十割蕎麦の「箱盛そば」。わさび、みじん切りのネギ、大根おろしを少しずつつけ汁に入れ、少量のそばを取り出しつけ汁に浸し、風味ともちもち感を味わいながらゆっくり食べるがお勧めです。

店主コメント「なぜざるが箱形なのかですって?1980年代当時は、丸形が主流だったのですが、何か新しい少し変わった形にしてみたいと思い、考えた末このような細長い箱形のものにしました」。
